The Chiapas Criollo is a medium roast that is processed using organic techniques and is fully washed and sun dried. The chocolate flavors of the coffee are complimented by notes of cinnamon, while the green apple tastes can be enjoyed by itself or with cream. The coffee grows in the Chipias region of Oaxaca, Mexico and was grown by local farmers who strive to produce 100% bio-diverse coffees through conservation agriculture techniques such as natural fertilizer application, composting and agroforestry techniques.
